Laduree Inspired Sweet Table with Principal Planner

      I’m really lucky to have found what I love to do as a cake designer, and even luckier to meet extremely talented people in this industry who have the same passion in creating beauty for wonderful couples. What drives me is pushing my creativity and making couples surprised and happy in their wedding cake. So when Azar from Montreal’s leading wedding planning company, Principal Planner Events  , (yes, you MUST check her work out …breathtaking!)  and the uber talent Monique Simone Photography asked me to create a wedding cake design for a “Laduree Inspired” sweet table, I couldn’t say no to work with such passionate and creative wedding vendors. This is a terrific example about how wedding vendors are very much a team when working together in a wedding and when we are all focused in exceeding couple’s expectation the result is perfection. There are so many beautiful little details Azar styled in this dessert table that I’m just going to let the lovely photos speak for itself. “Too Cute” Cakes: Featured in Weddingbells Magazine

I’m going through a stage where I’m obsessed with all things cutesy and pretty. I’m even loving pink, glitter, and even started taking ballet lessons. This is coming from a past tomboy who wore overalls and plaid  (usually covered in mud). I guess you can my style has evolved and the little princess in me likes to come out when I  least suspected it. So when Weddingbells Magazine asked me to do a very “Cute + Playful” cake adorned with multiple shades of pastels, I couldn’t resist having fun with this cake.

For the design I was inspired by letterpress (thank you to the talented Deb from Palettera for lending me the templates for embossing and then painting), and felt flowers flowers (made in sugar paste of course.) When you put all these pastels together with a golden heart in a design,  you can’t help but think of the sweetness of  young hearts.

Sneak peek of the Dubai Wedding Cake

Well I’m back from an amazing journey to Dubai to create a beautiful (and colorful) wedding cake. Yes I travelled all way to the U.A.E. to work exclusively with the talented and passionate ladies behind Carousel of Life and teamed up with the yummiest cupcake bakery in Dubai, Sweet Stuff . The cupcake shop was so very nice to assist and lend me their bakery. I may had also had too many yummy cupcakes in that time (hint .. their sweet and salty caramel cupcake is diet ruiner but well worth the indulgence.)

It’s always tricky when wrapping your mind around how to make a luxury wedding cake across the world, so instead of attempting shipping it, I made it there. I was mostly excited to work with with Zainab and Leena from Carousel and after seeing how gorgeous the wedding came together I am so very grateful I got to be apart of such a talented team of venders in Dubai. Thanks again ladies and I so look forward to coming back to such an amazing city. Here’s a small peak of the wedding cake I created. Carried away in feathers {Owl Inspired Wedding Shoot}

Today I have a treat for you all! Back in the early  fall my dear friend (who is also one of the most talented and sweetest people I know),  Elizabeth Kaye asked me if I could create an owl inspired cake for a outdoor rustic shoot. I was immediately  inspired thinking about the multicolored  feathers that Owls have and with Fall being my favorite season I could wait to have her shoot my cakes in such a beautiful season.

I also got to work with wedding stylist and coordinator Lynzie Kent for Electric Blonde Entertainment and Events . She gave a very fresh and fun approach to styling this shoot and I’m so happy I was apart of this rock-star team. The shoot also  included gorgeous vintage inspired gowns from the fashion designer  Sarah Houston. Check it out and I would love to hear your feedback or even leave some love.:)

{Inspired} by Ruffles

     I’ve had a design relationship with ruffles for half of my life now, starting with my obsession of fabric before cake. It’s funny about  four years ago I was practically begging couples to trust me and design a ruffle wedding cake and now there’s a cake ruffle craze. Color Inspiration: Deep Purple Wedding Cakes

    Whether you call it aubergine, plum , eggplant, or just dark purple , these shades have found their way into elegant affairs. Some would say it has been used royally as the focal color with metallics like gold being the accent and in other ways the neutral when paired with a vibrant color like lime green or fuscia . Either way  you can’t turn your head to deep purple orchids, roses, and even cala lilies in any decorated party. Here are a few cakes I designed in the past few years with lush shades of dark purple.

Inspired by Color: Coral Wedding Cakes

Color plays a huge role when it comes to designing the wedding cake, let alone setting the tone to the entire event. I want to share some color “cake flashbacks” to show different ways we have brought a color to the sweet life (pun intended.) First up, Coral. There’s something very happy and elegant about coral in which  I love to design custom works with. Sanaa and Fidan’s Sweet Table

         Recently Sanaa and Fidan’s sweet table was featured on the Amy Atlas blog (the queen of dessert tables.) Back in July a designed this sweet table and cake for their reception which included a cake inspired by Sanaa’s Amsale dress and framed macarons and meringues. Enjoy!

Simply Chic Ruffles

Last weekend I taught another Haute Couture Class at the Bonnie Gordon College of Confectionery Arts last weekend. It was such a fun group of talented cake decorators and I enjoyed sharing my couture techniques with them and look forward to seeing their future successes in such a rewarding career.

I get asked a lot how long I’ve been creating cakes for (since some are surprised that The Caketress could be so young when meeting me). I’m 27 and been decorating for the last 8 years. I’m very grateful I’ve found one of my passions in life at an early age and even more thankful I am able to share my skills with students around the globe. However I have to dedicate my passion for being creative and artistic to my Mother. At a very young age she saw that the arts made me happy and pushed me into painting, sculpting, pottery, and anything creative she saw would fulfill my young soul. She passed on 12 years ago but I have continued to use my inspired soul  and skills in dedication to her and the impact she had on my life.

Brush Embroidered Cake – Class Cake

This past year I’ve been very fortunate to teach some lovely classes. I’ve been flown to New York for a private class here and there and also been going to Montreal for private group classes. I really love mentoring some of the most passionate cake decorators I’ve ever met. I also teach a regular Haute couture class at the reputable Bonnie Gordon College of Confectionary Arts.  Here’s a two tier design I did for a class in Montreal discussing brush embroidery painted with watermelon pink and gold accented with pearls. Wonderfully White Wedding Cake

I just had to blog this five tier white wedding cake. The lovely couple said their I do’s in a beautiful art deco movie theatre turned venue, The Eglinton Grand  in Toronto. For the design we did pearl painted and embossed tiers with ruffle trim and fantasy fashion flowers. It’s funny when I first started decorating cakes I was obsessed with vibrant colors and now I find myself appreciating the subtleness of soft and simple palettes. Cirque de Soleil Bridal Shower Cake

For the most part I do believe that everything on a cake should be edible. Partly because I’m a tad of a purest when it comes to baking being raised in farm country where the eggs in the christmas cookies were from my Grandma’s hens down the road  and the strawberries, rhubarbs  and apples in my mother’s pies, I  hand picked from the backyard. The other factor is because as an artist I am challenging myself to create almost anything into an edible medium for the design. However once and a while I do feel the need to break my own rules in the best interest of the design.

A little while  back  the very talented wedding gown designer Kim Ironmonger of Valencienne  asked me to design a Cirque de Soleil  inspired cake as a special touch to a friend’s bridal shower. Kim and I plotted  the touches to this vibrant cake with a sugar mask topper and hand painted cake. It was a lot of fun creating this fun and unique cake.

Lovely White Wedding Cake for {Elysia and Matt}

Okay maybe I have too much fun with the chalk board in my cake studio but I photograph most of my cakes on that wall because it has the best light to capture the cakes with windows in front and to the side of it. I recently been getting a lot of good feedback on how I stage the photos but honestly it’s really whatever I have time to do in between getting the cakes ready to deliver.  I wish I could say I remembered to capture all of this years cakes but their have been a few that never had their close ups unfortunately. I try my best to blog and update new designs when I can and enjoy sharing with you all (whoever you are that enjoy hearing about my sugar journeys.)

For Matt and Elysia’s wedding cake design we went with an elegant white, pearl, and gold palette. The details included white flowers with golden sugar buttons and broaches inside them, ruffled trim and rows of timeless pearls. I enjoy the unusual tall narrow tiers to this design and was a great fit for their reception at Copper Creek Golf Club in Kleinburg. Congrats to the super lovely couple!
